In this post, I’ll show you how to easily and deliciously make braised eggs in soy sauce called Gaeran-jangjolim, a popular side dish in Korea. Although it’s a simple dish made with eggs, it boasts a deep, rich flavor and is also healthy. It’s easy to make, so be sure to give it a try!

Braised Eggs in Soy Sauce Recipe

 

 

<Ingredients>

  • 5 eggs
  • A pinch of salt
  • A little vinegar
  • 4 cloves of garlic
  • 5 shishito peppers (or any mild green peppers)
  • 1 cup of water
  • ¼ cup soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon corn syrup

<Instructions>

  1. Boiling the Eggs
    First, prepare the eggs. It’s important to leave the eggs out at room temperature for a while before boiling, especially if they were in the fridge. Cold eggs tend to crack easily in boiling water. Boil the eggs in water with a pinch of salt and a little vinegar for 15 to 20 minutes, depending on your preferred level of doneness.Tip: Fresh eggs will retain a nice round shape when peeled. If the egg whites are uneven or if you hear a sound when shaking a raw egg, it’s likely not fresh. For perfectly hard-boiled eggs, reduce the heat to medium once the water starts boiling and continue cooking.After boiling, cool the eggs in cold water and peel them.
  2. Preparing the Ingredients
    Slice the garlic into thin pieces. For the peppers, remove the stems and cut the larger ones in half. For smaller peppers, use a toothpick or skewer to poke 2–3 holes to help them absorb the flavors during braising.
  3. Making the Braising Sauce
    In a pot, add 1 cup of water, ¼ cup of soy sauce, 1 tablespoon of corn syrup, and 1 tablespoon of sugar. Stir in the sliced garlic and add the peeled, boiled eggs. Start simmering the mixture on medium heat.
  4. Braising the Eggs
    When the liquid reduces by about half, add the peppers. Stir the eggs occasionally to ensure they absorb the sauce evenly. Once the liquid reduces to about a third, turn off the heat and let the dish cool. Cooling allows the flavors to penetrate the eggs further.
  5. Final Touches & Storage
    Once cooled, transfer the braised eggs to an airtight container and store them in the refrigerator. The flavors will deepen after 2–3 days, and the dish can be enjoyed for up to a week.


Cooking Tips & Notes

  • Adjusting Saltiness: The recipe uses ¼ cup of soy sauce for a balanced flavor, but feel free to add more soy sauce if you prefer a saltier dish. Be sure to adjust the sweetness accordingly by increasing the sugar or corn syrup.
  • Add Variety: You can swap shishito peppers for spicier peppers like green chili for a kick. Other ingredients such as shiitake mushrooms or konjac can be added to enhance the texture and flavor.
  • Flavor Absorption: To help the eggs absorb the soy sauce mixture evenly, stir and roll the eggs gently while braising. This will ensure all sides of the eggs soak up the delicious sauce.
